Ingredients:
One to two lbs. of tiny white potatoes (the smaller, the better) 2 TBS Vegetable oil 1 to 2 TBS All-purpose bbq rub
Preparation:
Wash potatoes, then combine all ingredients in a disposable half tray. Toss well to coat each spud with oil and rub. Bring smoker or grill up to 270 degrees and place tray on upper rack. Cook for about 1.25 to 1.5 hours or until potatoes are creamy in the interior and nicely colored on the outside.
If you like, toss cooked potatoes with 2-3 TBS of your favorite bbq sauce and return to the cooker for 10 minutes. Enjoy!
